Caribbean-inspired Cuisine Re-invented at Seven Restaurant, Seven Stars Resort, Turks & Caicos

Innovative Menu Focuses on the Exotic and Savory with Specially-Created Rubs Inspired by Flavorful Ingredients and Spices Brought By Traders of the Past


GRACE BAY, Turks & Caicos (March 8, 2011) - For those who enjoy a more exotic, authentic dining experience when traveling to the Caribbean, Seven, the newly re-designed signature restaurant at Seven Stars Resort, offers a new, inspired menu of savory, spice-infused dishes.


Open for dinner six nights a week from 5:30pm – 9:30pm, Seven's foods are inspired by the history of the Turks & Caicos Islands and its colonial past as a mining center for salt – a staple for making Salted Codfish, a mainstay of naval explorers. In addition, the Islands benefited from the migration of spices, foods and cooking practices shared by Portuguese traders as they traveled the world. That cultural diversity of flavors and styles is the centerpiece for Seven's menu of uniquely prepared dishes that includes the following items:


Firsts (Priced from $14 to $18):

  • Curried Mussels – Fresh, Rope-Grown Black Mussels in Yellow Curry Broth
  • Salt/Pepper Calamari – Light, Crisp and Savory in a Tamarind Dipping Liqueur
  • Mojito Gordo Shrimp – Extra Large Shrimp in a Local Rum Court bouillon, Fresh Mint-Lime Sauce

Specialties (Priced from $35 to $38):

  • Wet Jerked Berkshire Pork Chateaubriand - Heritage Pig with a Mango-Habanera Salsa
  • Beef, Ox, Love – Coffee-Rubbed Petite Filet-Braised Oxtail, Natural Jus
  • Rum-Butter Poached Local Lobster – Rich and Tender Lobster Flavored with Whole Butter Rum
  • Hommage to Cod – Salt Cod Al Pil-Pil – Spicy Black Cod with Escoveitch Glaze, Sweet and Sour

In addition, the menu features a separate selection of steaks (priced from $19 to $39) – from Free Range Chicken Breast and Sashimi Grade Ahi Tuna, to Fillet of Local Snapper, New York Sirloin 10 oz., and Eggplant Steak, each available with the guest’s choice of flavor rub, including:

  • Molé Rub – with cocoa, almond and spices
  • Coconut Curry – with coconut milk and spices
  • Chimichurri – with oregano, garlic and spices
  • Maitre Rum Butter – with whole butter rum
  • Jerked Rub – with jerk-mixed peppers and spices
  • Chermoula Rub – with lemon, garlic, saffron and spices

Desserts (priced from $11 to $14) are equally authentic and inventive and include Chocolate Banana Bread Pudding with Key Lime-Vanilla Cream, Caramel Flan with Cocoa Nibs and Mango-Passion Fruit Salsa, and Pineapple Polenta Cake with Coconut Flakes and Pomegranate Syrup.


To help guests celebrate the Turks & Caicos Islands’ 250-year legacy as the largest exporter of salt in the world, guests are encouraged to sample the Seven Salt Collection – a variety of four flavored salts displayed in small jars at each table, specially chosen to accent meat, fish and other dishes on the menu. The Seven Salt Collection features Alaea Hawaiian Red Sea Salt (ideal for meats), Velvet de Guerande (delicate enough for any dish), Salish Alder Smoked Sea Salt (giving any dish a smoky flavor), and Kala Namak Indian Black Salt (a distinctively flavored mineral salt, best with meats).


The wine list at Seven is equally unique, offering servings by the glass, splits and half-bottles for champagnes, whites, reds and specially-priced sommelier reds. To assist guests in making the perfect pairing, the wine menu also lists selections within each category according to a sliding scale of flavor – semi-dry to dry for champagnes; crisp to buttery to woodsy for whites; and light to spicy to full for reds.


Pre- and post-dinner, guests can also take a seat at the bar and enjoy an array of light fare appetizers, salads, savory nuggets and sandwiches, along with a varied menu of classic and contemporary cocktails, including Seven's signature drink, The Seven Starry Night, which is a blend of Captain Morgan’s Rum, Bambarra Coco, Bambarra White, Blue Curacao, Peach Schnapps, Grenadine and Sprite. For a change of scenery to sip an after-dinner cocktail, or savor a delectable dessert, an indoor-outdoor cigar lounge is also part of the Seven experience.
